- What is yeast? We know that bakers use it to make the dough 'rise'; without it, our bread
would be flat and hard. In the days when people made their own bread, they would
go to a brewer and get a jug of brewer's yeast. It was fluid and yellow. Nowadays,
yeast is made commercially on a large scale. The yeast you buy at the supermarket,
the yellow lumps done up in paper, has been compressed for convenient handling.
- Yeast is a living fungus that is capable of reproducing itself. A piece of yeast consists of minute plant like cells; you can feed it with
a solution of sugar to make it grow, or it can be 'killed' by 'starvation' or
heat. The primary function of yeast is to supply carbon dioxide gas which inflates
the bread dough during the early stages of baking.

Yeast can be found in many foods stuffs such as bread, Marmite, vinegar, alcohol,
ginger beer, stock cubes, antibiotics and vitamin B supplements.
Yeast can be hidden on food labels under the name of hydrolysed protein, hydrolysed
vegetable protein and leavening. If you have yeast food intolerance then you may
also be intolerant to fungi-containing foods such as cheese, mushrooms, peanuts
and malt.
